Mango ice cream is one of those recipes I make when I don’t feel like buying ice cream from outside but still want something nice and refreshing. It all started as a very simple experiment with ripe mangoes at home and turned out so good that I started making it again and again. What I really like about this recipe is how natural and comforting it feels. It just includes mixing the ingredients together and letting it freeze for a specific period of time. This recipe is perfect for summer days where you want something simple.

This is something refreshing, comforting as always as it is homemade. 

Instead of a store-bought ice cream, you can easily make this mango ice cream at home using simple ingredients. The result tastes more natural because in this recipe we are going to use real mangoes.

The best part of this recipe is that you don’t need any ice cream machine to prepare this ice cream. The whole method is done using basic kitchen tools. All one needs to do is mix the ingredients, freeze it well, and tadaa! Your ice cream is ready. It is simple and perfect for summers without putting too much effort. 

How to choose the right mangoes 

Since this is a mango based ice cream, choosing the right mangoes is very important for making good ice cream. As mango is the main ingredient, the final taste of your ice cream depends on how sweet and flavourful the mangoes are. 

Always use ripe mangoes which are naturally sweet because ripe mangoes have a strong aroma and soft texture which becomes perfect for ice cream. These qualities give a rich taste and smooth texture to the ice cream.

Avoid using mangoes  which are not fully ripe because they give a sour taste. Sour mangoes can spoil the whole taste of the ice cream making it less sweet. Since the flavour of the ice cream must be naturally sweet it is always recommended to use ripe mangoes. 

Some mango varieties like Alphonso or Kesar are the best options to prepare this mango ice cream. They are sweet and have a strong mango flavour which makes the ice cream taste so much better.

Ingredients Required 

  • Mango pulp – 1 cup 

Mango pulp is the main ingredient so use fresh and ripe mangoes to make the smooth pulp which gives the ice cream its natural sweetness .

  • Fresh cream / whipping cream – 1 cup 

Fresh cream is used to make the ice cream creamy and smooth and to give the ice cream its perfect texture.

  • Condensed milk – ½ cup (or sugar – ¼ cup) 

Condensed milk is used to add sweetness to the ice cream. You can also replace it by using sugar but make sure to mix it well so it dissolves completely.

How to prepare mango ice cream

Step 1: Getting the mango pulp ready 

  1. We start by taking ripe mangoes and wash them properly. Peel the mangoes and separate the seed, then cut the pulp into small pieces. 
  2. Take this pulp in a grinder and make it into a smooth paste. 
  3.  Just make sure that there are no lumps in the pulp.

Step 2: Whipping the cream 

  1. Take a bowl and add chilled fresh cream and start whipping it using a whisk or a hand mixer until it becomes light in texture.
  2. The cream should look soft and creamy like how a usual ice cream has its texture.
  3.  Make sure not to make the cream too stiff. 

Step 3: Getting everything together 

  1. Now to this whipped cream, add the mango pulp which was prepared before and mix everything gently.
  2.  The mixture of mango pulp and whipped cream should look smooth and creamy. 
  3. Transfer this prepared mixture into a clean container and spread it evenly.
  4.  Close this container with a lid and now we have to freeze the ice cream. 

Step 4: Freezing the ice cream

  1. Now place this container in a freezer and let it freeze properly for about 6 to 8 hours or until it sets completely.
  2.  Once you notice that the ice cream has been set perfectly you can then scoop your homemade mango ice cream!

  • Always use chilled cream before whipping as this helps the cream to mix properly and give that perfect creamy texture to the ice cream.
  • Avoid over mixing the ingredients. Always mix the ingredients gently because over mixing the ingredients can make the texture heavy and it may affect the final result.
  • The taste of your ice cream always depends on the type of mangoes that has been used. Always use right and naturally sweet mangoes for best flavour.
  • Freezing the ice cream properly is very important. Let the ice cream set properly and avoid opening it again and again.
  • Always store the ice cream in a tight container with a tight lid as this helps prevent ice cream from forming crystals.
